I like to use the Assassin's Hood instead of the Gloom Helmet myself, thus lowering the Endurance by 5 and putting these 5 points elsewhere.

Dark Steel Shield +5

Right-Hand Weapon 1: Large Sword of Moonlight
Right-Hand Weapon 2: Talisman of Beasts

Left-Hand Weapon 1: Dark Steel Shield +5
Left-Hand Weapon 2: Sticky (Viscous) Compound Long Bow +5

Gameplay tips and progression

I would go for a little Vitality and/or Strength/Dexterity first. Then go for Faith and after that go on and put them wherever you want. I went and got the Large Sword of Moonlight as soon as possible making me level up Faith sooner but that's just me. I don't recommend it because it is hard to get to at a low level.

Make sure your always stocked up on Spices and Grass.

When fighting a boss or someone else I usually used Old Spice for Mana UP and Full Moon Grass for HP UP just to be safe and make sure I didn't take much time healing up and getting mana up. You will also notice that this will help out with people that are hard raters because they will see that you are in the fight and not over in the corner eating most of the time. Also use the Fresh Spices and all the other Moon Grass for fighting the level and save the Old Spice and Full Moon Grass if you can.
