Run towards the back of the knights with weapon equiped 2-handed (press trianlge). No more than 2 "R2" attacks kill the knights, though weaker weapons take longer. Once you defeat the second knight, quickly tap trianlge to bring out your sheild while holding L1 to defend against the crossbow menn. Kill the 3 crossbowmen and collect the loot. You can happly farm souls, crescent/half and late moon grasses here as well.

Optionally - You can run upstairs as you pass through the gate to behind the first knight. Before going in the room to the right, if you have not been here before there will be a crystal lizard. Kill this and continue to run up stairs to kill an extra 2 crossbowmen. This takes extra time and doesn't make it a great method for souls.

Target the first blue knight when you pass under the stone arch, wait till you nudge him very slightly and then slam R1. This should induce a backstab crit and kill him, then proceed to do the same with the second. Make sure you press L1 while backstabbing the second, else the crossbowmen will hit you. Proceed to kill the three crossbowmen with your shield raised, and merrily skip back to the archstone. Gets ~1100 souls with soul level 35.
