Killing the Blue Eye Knight is manageable for a new player but the Red Eye Knight can be very tough. There is a trick to kill him, though, that is very easy. When you are heading up the spiral staircase towards the Blue Eye Knight, DO NOT break the two barrels near the top that partially block your path. Walk around them on the left side leaving them intact. When you reach the Red Eye Knight, get close to him or use a throwing knife to get him to head towards you. Now run back to the spiral staircase letting him follow you the whole way. Don't just run because he is pretty slow and will turn around and go back to his post. This can be a bit of a pain on your first time but you can hear his feet and armor as he chases you so just slow down and make sure he keeps coming.
When you get to the staircase, make sure he is still following you and hurry down to where you left those two barrels intact. Go around them again and stop halfway across the next platform next to the wooden railing. When the Red Eye Knight comes down the stairs, he will stop at the barrels. Then he will turn towards you and run off the edge committing suicide and giving you his souls for free. This works about 9 out of 10 times, occasionally he breaks the barrels and comes after you but it is rare.
This takes slightly more time than actually fighting and killing him but to anyone who gets repeatedly owned by him when they first start playing, it is worth it.
