Magic Strategy

You can also use soul-ray to take them out in two shots from the stairway just behind
them with a magic stat of about 17.You may not be able to get in two consecutive hits,
but when they charge you they attack from a fair distance away and a simple dodge-roll
backwards will allow you to cast again, or they will try to heal which will open your window up even more.

You can also utilize the Thief's Ring so that there will be no chance of detection, and the ring-of-magical-sharpness helps quite a bit as well.

Magic Strategy 2

If you get all three red-eyed knights attention, you can cast poison cloud then run past the archstone. Because of the game's mechanics, enemies cannot travel into an area they don't "know." You just have to stand on the first step of the next area and watch as all three fall to the poison cloud in a couple of minutes.

Also, if you equip thief's ring and can cast soul thirst, if you wait by the arch stone until they reach ~350 health gone to cast it, you can get over 15k souls w/ BWT

Hit one of the Red Knights with soul ray wait until it gets close and as soon as you see sparks from the knights spear move back a few steps and immediately cast another soul ray, its a definite hit.

Melee strategy

This is just a tip for all knights in general, if you can get up close to initiate a shield bash, immediately circle around him on his his right (sword arm) then you can back stab him very easily.

Poison cloud

Theif ring or Black leather boots
Poison cloud or Death cloud
Soul thirst / Braclets / Ring

The way I do this, is wear black leather boots, silver braclets, and the ring, I also use Soul Thirst, though this is optional.
As expected, sprint close up near the red eyes then sneak up behind them approaching from one side. Target the middle of the 3 red eyes and cast Death Cloud, or Poison Cloud. If hit properly, you can have the 2 outer red eyes run at you, get infected, and the middle one stays where he is. Now basically run back upstairs having the red eyes following closely. After a while they will stop running at you. Cast Soul Thirst when they're almost out, and you should get aroun 4k souls per red eye.
If you have any mana left, go kill some of the archers ontop of the dead dragon just through the door of 4:4
