Are you asking why we don't get bored with the game?
Even though I've finished the game, I just enjoy playing online as either a Blue or Black Phantom. The only time I play in my own world anymore is if I create a new character for playing online at a certain Soul Level. It's fun to show a new player where everything is in a level, it's fun to help another veteran do a speed run, it's fun to kill evil Black Phantoms, and it's fun to invade and be an evil Black Phantom (if you're feeling mean). It might get old for me at some point, but it hasn't yet. There are other things you can do, though, if you need to challenge yourself.
Beat the game and/or tutorial with each class.
Beat the game without changing your starting Soul Level.
Beat the game without armor, and/or without upgrading a single weapon.
Play through NG+7 (supposedly, as hard as the game gets) with a beginning-level or relatively low-level character.
Reach Soul Level 712, the hard way (assuming that your PS3 doesn't crash).

Time it takes to reach it. Be ready for 1000+ hours and well over 200 play throughs (the "hard way" is no farming)
SL 712 The 'hard way' is pretty absurd. Let's assume you can farm 5,000,000 souls in an hour. It would, at that rate, take 200 hours to farm your way up to SL 712.
Or a 9-5 Monday-Friday dayjob for five weeks.
Clear out level 4-1 without opening the first fog gate and without defeating Adjudicator so 4-1 is still open for invasion. Go to body form and wait.
The more experienced guys can find you waiting at the top of the second structure or at the base of the left tree just below the second structure. More common is I just stand under the archway of the first structure :)

I usely do both. I go through 4-2 just grinding for a few then i become a ble phantom to help a buddy of mine. All in all i usely just walk around doing nothing.
Yes, I finished the game for the 6th time and had fun every second of it so then my friend comes and asks why do I have so much fun doing the same thing over and over again. I couldn't find a really valid answer except for helping people and PvP

Same thing happened to me :D This game just has some addictive gameplay. I just love a game that always presents a challenge and Demon's Souls delivered full force. Its rare you find a game you can play over and over without having to worry about being too powerful. With all this and the ever present threat of BP invades keeps you on your toes and your heart pumping! Do you need a better reason to keep playing? XD

I just do a quick run of all the bosses, make a NG ++x…x+, make sure i'm in body form during the full time, so i get more chance to get invaded, then i go and do some pvp, which i love and really enjoy. the only thing i don't like is if i'm in body form and the BP goes up and gang with monsters because he can't kill me solo. But that's part of the game. I'm not the best though so I can really take a beating, but I really enjoy the whole game. Just play with a friend, that helps to keep yourself active. Helping him by making him do some runs or just showing him your knowledge of the traps :P

Just don't cap your guy at SL 30 with a Makoto +5 and Adjudicator +5. It gets really annoying.

lol capping your guy at soul level 30 is ridiculous. You wont see much players roaming at that sl, its pretty cheap considering there are new players coming aboard and still learning how to play, and to top that off, you won't get much fun
I'm just trying to get all the trophy's right now. After that I might delete my save file and start from scratch again but thats a big maybe.

or lvl 120 wait behind black phantom spawn point with firestorm, its hilarious when they get hit and lose there cool and go berserk, its alos when they are easiest

This is cheap though. Most invaders in 4-1 are looking for a good fight, not a firestorm or backstab welcome.

Is there a specific reason why everyone doesnt continue to level-up their character beyond 120 and fight the people in range?

It's oddly circular. 'Helpful' sites like this tell everyone that the best pvp happens at 120 because that's where the majority of players who pvp are at… (and because it requires fairly little investment of time, as compared to the higher levels.)
Funny thing though, people only stay at 120 because they follow this. It would actually be more fun and have a greater variety of play style if people just ignored this and went about playing.
Because 120 has been chosen as the arbitrary level, certain weapons/ builds will never be played because they require more investment of stats to be their best…. the more organized and conformed, the less fun!
I think a good example might be a mage - everyone always talks about 'diminishing returns' blah blah blah, but magic is in fact the one stat that continues to be the gift that keeps on giving all they way to 99. Your 60th magic pint is just as valuable as your 39th or 89th….
I say play at 120 for a while if you like, but don't be afraid to go higher… Be a leader not a follower. It only takes a few real players to be at a certain level before the masses will follow - just look at the asian servers - the best pvp there is around 250 or so.
This is what confuses me.. I hear from some people that magic also has diminishing returns and from others it doesn't. Has anyone actually done extensive testing on this?
I can't say that I've 'tested' it. I do have magic users with 40+ magic, though.
From the site guide -( http://demonssouls.wikidot.com/stat-magic ) you can see that as your magic stat goes up, the magic power goes up equally - not proportionally as with DEX/STR/VIT/END etc.
It is therefore my *assumption* that damage done from a spell with a magic score of 40 (magic power 4000) will be half as much as a spell with a magic score of 80 (magic power of 8000)…
I had a level 289 mage before I had to format my Ps3… every-time I raised my magic stat… my magic got noticeably stronger. Just look at the damage number before and after you level up magic. On the other hand, it's common knowledge that every character does more damage in soul form then they do in body form and world tendency plays a part with npc's stats.

Yh all I get from magic is higher power and good spells. As for how I don't get bored with DS, is replay value, pvping, still a challenge to defeat enemies with each playthrough, good drops and ores to upgrade weapons, cool armors with up and down sides to em to figure out, the game is a good challenge, being able to help others and totally disrupt others. All in short, its a totally awesome game that is very very difficult to get bored with. And setting personal goals like StefanieTN's suggestions, that is pretty good for keeping an interest in the game.

I just make a new build and switch around between them to keep things fresh. Right now I have a Spellsword, Holy Knight, Crusher, Claws, BBS, and a Ninja. I still plan to make pure mage, phalanx, a more offensive dex build, and a faith-based dex build. I foresee many hours being put into this game!
