I'm not sure how helpful this is, but I defeated the black version of Satsuki by striking with a spear past a purple flame shield and applying continual pressure, I just sidestepped his two handed attacks (which drain a lot more stamina) and counter-attacked after his single hand strikes. I was about soul level 40 at the time, I used no spells but was wearing a grave robbers ring. He didn't land a single blow on me, I believe in a previous attempt he did and one hit killed me (soul form and black tendency reduced my 20 vitality to very little). Stamina wasn't an issue as I was wearing cloth armour, after I realised he would one hit kill me either way, cloth or fluted plate.
