Just starting out in the game and enjoy the challenge, but I have to admit I don't think I understand the proper way to handle multiple enemies with melee weapons. Sometimes of course you can carefully trigger only one enemy at a time to approach but when there are two or more, it seems very difficult to separate them so that you can address just one attack with a proper block, dodge, or parry. Learning how to fight effectively seems to be the core of the game and it would be helpful not to have to die more than I already am. Any and all suggestions would be appreciated!
Basic tips I would provide are just try and keep an eye on all of them, keep you distance (rolling back when needed) and only attack when none of them are showing signs of attack while one of them is showing a sign of an opening. The hardest for me tend to be knights and skeletons. Skeletons are just so insanely aggressive sometimes the best strategy is to be more aggressive than them. The issue with knights is they tend to be very defensive, and waiting for one of them to have an opening while the rest are not attacking can be a pain. The only other enemy that can overwhelm easily in numbers is the giant trolls, and for them I recommend pulling them one at a time with a bow.
Not sure how far you are into it, but one thing I did to sort of train myself was to attack the 3 red eye knights after beating 1-3. Just start at the penetrator archstone and walk back until you have all 3 of them on you. This is a good way to earn souls at the same time it is a good learning experience and really fun.
Backpedal, and i mean it. If you get surrounded you are in deep trouble. try to keep them in front of you. If you have a sword that hits a large area just wait for the right timing and damage 2~3 at the same time. If you have a shorter weapon like a spear, bring them to a tight space and do like the Spartans did to the Persians in 300.
Just don't give your back, don't put yourself in a corner you can't escape, and keep a eye on them. Just be patient and wait for the right timing to attack.
What I try to do whenever possible is to target one of them and then walk backwards. This usually gets them to all line up in a row and once the first two get separated a bit I do an attack on the first one then walk back a bit more and just keep doing that.
Another thing I do, if it just isn't possible to "kite" them I turn around and run away until they turn their back and start to walk back to their area. I then run up and attack the last one, rinse and repeat.

the only hard combination thats hard to beat are the 3 red knights in front of the penetrator boss all the other ones have an easy weakness

Try to keep your target between you and the rest of your enemies. Keep lots of open space around you and make sure you have some way to fall back or circle away. If your weapon hits hard and has a big attack area (large swords, 1h straight swords) then sometimes you can just jump in the middle of em and swing for the fences.
Use ranged attacks to piss off those three red eye knights, isolate them, and kill them one by one. Or just kill them with arrows or spells, but that can take more time depending on how hard you hit.
