Ive shot with my Flame Bow, slashed with my DSoM, and a blessed mace. He takes zero damage, what am I supposed to do. I read the wiki strats but no damage…
Attack his head, if that doesn't work, attack the bleeding spot on his stomach( hard to miss), and he should fall. Then run to his head and attack. For newbies, I suggest soul arrow on the head from above.
WARNING: Beware the tongue, it stretches anywhere.
The tongue won't hit you if you hug the fog door. Step out to the ledge from there, shoot him in the head ONCE, then get back to the fog door. Wait for the big lug to stop his tantrum, then repeat ad nauseum until the big lug is sucking gravel.
If you plan on meleeing him to death, there is half a cleaver sticking out on the left side of his stomach. Smack it a few times and he will fall over then just go to town on his head.
Rinse, wash and repeat and he will die in no time, and, you can roll under his arm to avoid getting hit by his cleaver.
To add to what Anorack said, there is a visible (and audible) difference between a successful hit on the cleaver and an unsuccessful hit. Successful sounds like just about any other normal hit in the game - a wet thump/slash type sound. Unsuccessful, well, you know the rubbery, bouncing sound already, I suppose. Also, there's no need to roll to avoid his hits, just listen for that weird noise he makes and then walk to the right until you're just past his arm on that side. When he swings, it won't make it far enough around to hit you, and you'll be almost perfectly positioned to go back to work on his belly wound. When you do this, he never uses any of his other attacks, so you're pretty much golden and he becomes just about the easiest boss in the game to fight with melee weapons.
Yes, just walk counter clockwise around him while Locked on to the Damaged meat cleaver in his side, stay very close to or past his left arm, then after he swings, hit the spot a few times, rinse and repeat.
Exactly, just go counter clockwise, avoid his cleaver attacks and tongue attacks, stab is gut and then lash out on the birdie head.

I played as a blue phantom a few days ago, we were two blues hacking away at him while the host was upstairs soul raying him.
He fell down first time no problems and we got him down to 1/4 health before he got back up, but every time he fell after that he just bounced back on his feet before we could attack his head, soul ray didn't damage either. After a while the host just disconnected.
With 22 Luck, BBS, Light Weapon cast with an iCat or ToB, I can down him in one fall. It's quite fun to watch him slosh down, then beat the crap out of that annoying crow on his head.
