I've been messing around at SL 80 for about a week now and here are my results. I was getting tired of waiting for invasions and invading at SL 120 so I ventured into the SL 80 zone with some friends. (Shout-out to Moonbasin, Jsum721 and Beggar_So) On some weeknights it is pretty slow at 120.
SL 80:
The Kenpachi build is pretty weak IMO. Great against noobs but not versus an experienced PVPer. I've enountered a few Kenpachi and have not lost to one yet. The problem is that it is built for a Makato and that sword needs an adj shield on the back. I like having morion or knights shield or DSS for my left hand the adj is usless in PVP IMO. I can trade hits with a Kenpachi Build and he'll die when I hit hyper and they don't or you'll get parried if I'm rocking my shield. Plus with the temple knight base the moon uchi 5 does more damage than the Makato and has the added bounus of magic damage to cut through warding.
Overall there are lots of activity at this level and I am getting a lot more PVP playtime per hour at this level. You can invade 14 and 42 pretty much nonstop. There is usually someone trying to pass those levels or farming on those levels.
I have 2 different builds at this level built for invasions. I don't really host at this level. I want non-stop action so if I'm not running through levels then I am invading.
Since there are lots and lots of noobs at this level I do have a rule. If I invade your world 2X and kill you and I get in a third time…I'll drop a nice weapon or some supplies for you….for being a good sport and to ease my own guilt of killing noobs.
Here are the most common mistakes I see at SL 80:
Rule #1 YOU MUST be able to do a full speed roll. I think this is the number 1 rule in DS PVP. No exceptions. I'd rather be naked and be able to roll than armored up and clank on the floor. No Roll = Death by BS.
Rule #2 If you use a large wep like DBS or MC don't use a shield. Go build a morion blade. Goes back to rule number 1 and you probably can't roll and you don't have enough end to block and swing a large wep at the same time. There are lots of MC with PFS and DBS with PFS or Bushwood shield set ups at this level…don't do it.

I usually run with the Secret Dagger. I'll break out bigger weps if I see a 3v1 coming….like a Blessed Claymore.

Left: Morion with TOG…Sometimes I use a shield…but mostly Morion with my Fath build…
Right: AXs…all of them…but mainly Gullie Ax…very similar to BBS except less range…..with an Estoic +10 or baby's nail as backup.
The Bless GA 5 hits for over 500 at this SL….almost as much as my 120 faith. Difference being less Vit and End.
