Personally i find best to use fire spray (From hard demon soul- Sage Freke) and hold down the (L1) to cast continuously to stop it from moving, and have thief's ring from 1-1 (it is VERY handy!)

I'm not sure if the lizard will respawn after being disturbed and returning to it's original position however.
Returning after disturbed only applies to some of the lizards.
For example the first you encounter in 1-4 and 4-2. If you use a thief's ring and snipe them with a bow from a distance, then remain in your location, they will stop running before they fall off an edge or burrow underground. Then they will slooooowly walk back towards their initial location, rinse and repeat.
For others, once you get an influx of souls after they run away, counter is decreased by 1.

Yeah.
4-3 - in higher NG, I usually hyper-mode snipe the left hand lizard (looking out to sea) and then wait for him to amble back, before shooting again.
I'm just wondering. If I disturbed him, then let him return, then exit the level. Will that be -1?
Is it disturbing the lizard that triggers the counter or death/escape?
I don't think disturbing him will change the counter if he returns, not 100% sure.
I know that some of the lizards that burrows underground gives you an influx of souls after a while, so it's most likely counted as a death as well.
Crystal Lizard Hunting
Halberds and Mirdan Hammers are without doubt the best (ordinary) melee weapons for Crystal Lizard hunting. These pole weapons strike very low and will hit the crystal lizard(s) on every strike and knock them over, taken that you have them targeted. Wield it with 2 hands and use the R1 attack, the running strike is perfect for the first hit. A +6 Halberd or Mirdan Hammer will deal approx 60 damage. Have one of these in your inventory in case you run into a lizard or two.
Don't upgrade it to Moon or Blessed if you're going to use it for Crystal Lizard hunting - as they are very resistant to magic. Dragon (Dragonstone) is the way to go. A fully upgraded Dragon Mirdan Hammer deals a whopping 358 damage (not necessarily 358 damage on lizards).
Always have a Thief's ring equipped. Along with light armor for easier and longer sprinting. Don't roll-attack with these weapons as the attack is quite useless. Approach the lizards slowly and charge them once they start to run (unless you're going with the ranged option, listed below).
Bows, Crossbows and Spells are also very useful, try using Fire arrows/spells, it will knock the lizards on their back allowing you to get to it before it starts running. Many lizards will get "one-shot" by fire arrows and fire spells.

I found that using the storm ruler to kill these two lizards is pretty handy. You have to aim correctly and even if you miss it will not disturb them. Just wear the thiefs ring and remain a distance from them then use it. It will take about 6 or more hits to kill them with it but I found this to be a good method.
